Paso Robles is situated about halfway between Los Angeles and San Francisco. The region specializes in Cabernet Sauvignon.

The Paso Dragon’s name comes from Lake Nacimiento which you can see by the wine label and you use your imagination does look like a dragon. We reviewed the 2020 vintage and the 2018 vintage of the Paso Dragon Cabernet Sauvignon 2021 and it is a wine that has proven to be a bargain.

We are not provided with any information about the making of this wine, the oak program and the exact location of the vineyards are important with a Cabernet Sauvignon. But, an 8-dollar Cab that has been consistently very drinkable does say a great deal about this Cabernet Sauvignon.

The family-owned winery from Paso Robles that made this wine did not put its name on the label, I found them by doing a trademark search. So I won’t reveal the name, but if you are interested in doing a quick trademark registry search will offer results. Wineries that make custom wine for a particular customer may make a wine that they would not produce otherwise. I do not think any winery would produce a wine of lesser quality for a customer, so these wines do refelt the general quality of the wineries wines.

The color is dark cherry red with black highlights. The nose is extracted blackberry, a slap of spice, chocolate brownies, jammy raspberry, vanilla, and a savory note. The Paso Dragon Cabernet Sauvignon 2021 is a rounded, smooth Cab Sauv with sleek full flavor.

This Cabernet Sauvignon tastes like rich blackberry, a little licorice, followed by creamy vanilla, dark chocolate, and ripe plum. The mid-palate shows a little spice, orange zest, and ripe blueberry. This Cabernet Sauvignon is more sleek and long than complex and deep. The tannins are sweet and the acidity is balanced.
