The Paso Dragon’s name comes from Lake Nacimiento which you can see by the wine label and you use your imagination does look like a dragon. We reviewed the 2020 vintage and the 2018 vintage of the Paso Dragon Cabernet Sauvignon 2021 and it is a wine that has proven to be a bargain.

Wineries that make custom wine for a particular customer may make a wine that they would not produce otherwise. I do not think any winery would produce a wine of lesser quality for a customer, so these wines do refelt the general quality of the wineries wines.

The color is dark cherry red with black highlights. The nose is extracted blackberry, a slap of spice, chocolate brownies, jammy raspberry, vanilla, and a savory note. The Paso Dragon Cabernet Sauvignon 2021 is a rounded, smooth Cab Sauv with sleek full flavor.
This Cabernet Sauvignon tastes like rich blackberry, a little licorice, followed by creamy vanilla, dark chocolate, and ripe plum. The mid-palate shows a little spice, orange zest, and ripe blueberry. This Cabernet Sauvignon is more sleek and long than complex and deep. The tannins are sweet and the acidity is balanced.
