The Story
Le Monde translates to “the world”. It is part of The Sorting Table family of estate wine producers. The vineyard lies between the banks of two rivers, and much of the soil is from what washed up from he river.
Pinot Nero and Pinot Noir are the same grape; Nero is Italian for dark or black. The vines are all over 40 years old.
This Bubbly was produced in the Charmat Method, which is how Prosecco is made. The wine is fermented the first time, then transferred to a large pressurized vat. A measured amount of yeast and sugar is added, then the pressure is turned on. The wine stayed in the tank with the pressure on for 20 days.
The Bubbly was left in the tank with the pressure off for an additional 60 days. The yeast devours the sugar during the 2nd fermentation, releasing CO2. The pressurized tank forces the CO2 back into the wine, creating bubbles.
Pinot Noir/Nero is one of the main grapes in Champagne, though Champagne is produced with a different method.
The alcohol content is 11.5%. This is a Brut or not-sweet bubbly.
