The Story
The Campo Viejo winery is located in the Rioja region of Spain, near the border with France. This Cava uses grapes from the Cava D.O., which is located farther east near Barcelona.
Most Cavas are produced using the three traditional, local grapes, Parellada, Macabeo, and Xarelo, and the bubbles are added with the Traditional or Champagne Method.
The Campo Viejo Cava Brut is barrel fermented before it is aged and then blended. It is then bottled (with a temporary top), and a measured amount of yeast and sugar is added to each bottle, and the 2nd fermentation begins.
In Campagne, the second fermentation must last a minimum of 18 months; here, the 2nd fermentation was closer to 9 months.
The alcohol content is 11.5%.
The Campo Viejo Cava Brut Tasting Notes
The color is pale gold. The nose is lemon, green apple, spice, and pear. Along with crusty bread and a light floral edge. The Campo Viejo Cava Brut is medium to light-bodied and complex considering the price point.
This Spanish Bubbly tastes like lemon mixed with tart apple, brioche, a hint of tropical fruit, Anjou pear, and stone fruit.
