The Story
Babich is a family-owned winery that started in New Zealand in 1906. One of the advantages of being one of the early wineries is that they had their pick of the best vineyard locations. They have 120 years of experience with the Marlborough grapes in the vineyards, and that length of time again in winemaking. Experience means something.
The Babich tasting notes are nicely detailed; they used the MS Sauvignon Blanc grape clone.
They used a variety of yeasts to start fermentation of the lots of juice; different yeast selections bring out separate flavors and textures in the wine. The different lots are then blended to add complexity to the Sauvignon Blanc.
The Babich Marlborough Sauvignon Blanc 2025 is aged for over 3 months on lees (on lees means the dead yeast is kept in with the aging wine.
This is a vegan-friendly wine since the fining was done with plant protein. Fining is removing the solids from the wine before bottling. It is usually done with egg whites but that is an animal by-product and not vegan.
