Rack and Riddle is a custom Sparkling wine producer with locations in Sonoma and Lodi. It is a large operation that can produce all types of Sparkling wines. Rack and Riddle produces Bubbly for Trader Joe’s and Aldi and multiple sparkling wines for famous brands.
The Kolbie California Brut Sparkling Wine is produced in the Charmat Method, which is the technique that makes Prosecco wine.
In the Charmat Method, the grapes are fermented to the required style, then after aging, the juice is transferred to large pressurized vats. The desired pressure is dialed up and in 30 to 45 days the bubbles are incorporated into the wine.

The color is a pale pink/gold. The nose is apple, lemon, a little spice, grapefruit, peach and pear. The Kolbie California Brut Sparkling Wine is not complex but has good flavor and a nice slap of spice.
This Bubbly tastes like apple and peach, candy spice, lemon curd, pear, and a little tropical fruit.
The acidity is balanced, but the bubbles fade quickly.
