The Los Dos Brut Cava is a traditional blend of Macabeo, Xarel-lo, and Parellada sourced from independent family-owned vineyards in the Penedes DO in Northeast Spain. Penedes is located in the Catalonian region of Spain where the central city is Barcelona.

Los Dos Brut Cava

Cava is produced in the same way as Champagne though its history in Spain begins in the 1860s while Champagne started at the end of the 1600s. The grapes listed above are the local indigenous used in almost all Cavas though some Reserve Cavas use Chardonnay and Pinot Noir.

The Los Dos Brut Cava is imported by Winebow, one of the top wine importers in the US, and Bodegas Borsao. Los DOs translates to “both” and the label shows two ballroom dancers as seen from above. The metaphor is two dancers working together and seamlessly matching their steps.

The grapes for the Los Dos Brut Cava are handpicked and fermented (the 1st fermentation) separately in stainless steel vats. The grapes are aged for a while and blended. The blended juice is added to every bottle, a measured amount of yeast and sugar are added and in 10 months you have Cava.

The recipe for Cava is basically the same for all Cava producers, the magic is in the details that each winery uses. This is a non-vintage Bubbly, the producer wants the wine to be consistent from year to year and each year accurately portrays the “House Style”. The alcohol content is 11.5%.

The Los Dos Brut Cava Tasting Notes

The color is yellow gold with happy tiny bubbles. The nose is lemons, grapefruit, green apple, peach, pear, and a hint of buttercream. The Los Dos Brut Cava has flavors with a bit of weight behind them, this a Cava that will pair well with cheese and small plates.

This Bubbly tastes like lemon, melon, and dried apricot, followed by a little crusty bread, and grapefruit. The mid-palate adds a salty/nutty sensation, a hint of vanilla, soft spice, and pear. The acidity is controlled and allows the flavors to unfold.
